Improve the leavening process
We were contacted by F., a pastry shop that deals with catering and suppliers of products
sweet and savory, mainly croissants for breakfast.They are a handicraft company that has always carefully chosen quality raw materials for his production, and asked us to help them improve the leavening process to enhance even more their offer. Their goal was precisely to be able to guarantee a finished product that maintains good taste and fragrance with the right consistency.
They are a medium-small reality, which does not have enough space for a leavening chamber.
OUR SPECIFIC SOLUTION

We analyzed the situation and identified the criticality: keep the temperature constant.
They needed a solution that would allow to regulate the entire leavening processchecking temperature, time and humidity.
We have identified within our range of food logistics products the mostsuitable for the customer needs, and after further comparison we offered our KOALA 90.For the coffee shops we recommended KOALA 70, with even smaller dimensions.
